Why 'our' mangoes?
Great question. Some years ago a fellow mango grower had shared a simple yet clever fix for the fruit flies that almost always infest 80-90% of the mangoes grown organically without pesticides etc. While you don’t see them when the mangoes are green (and acidic!), but soon their eggs hatch and burrow themselves nicely into the seed when the mango starts to ripen and turn non-acidic. This is the precise reason the mango seller on the street will buy green mangoes from the wholeseller and ripen them overnight using carcinogenic carbides. We then unsuspectingly buy those lovely looking ripe mangoes and pay the price at leisure 🙁
So rather than employ external fly traps which are almost always a hit-and-miss - given many mangoes will be growing away from any trap etc, we found this technique to be a very clever approach instead. One literally needs to dunk the just harvested green acidic mangoes (containing the unhatched eggs) into a high saline concentration hot water (50 deg centigrade is imp) bath for 10 mins, take them out, and then let them ripen on their own sweet time - even for 10 days or longer. You then get to enjoy a 90% plus hit rate with these naturally ripened organic mangoes. Feast without any guilt!

This is a Maharashtrian dish that my friend’s mother, Shubhada Kolhatkar mavshi had made many summers ago when I had visited their home as a schoolgirl. I had loved the refreshing taste, and try to recreate it whenever I get a chance.
Mallika mangoes are renowned for their exceptional sweetness and rich, complex flavor that balances tropical notes with subtle citrus undertones. When grown organically, these flavors become even more pronounced since the fruit develops naturally without synthetic interventions that can dilute taste.
A favourite from West Bengal, Gulab Khas mangoes live up to their name with a distinctive "rose-scented sweetness" and a rosy flavor that sets them apart from other mango varieties. This aromatic quality makes them exceptionally appealing for both fresh eating and culinary applications. These mangoes feature non-fibrous pulp making them incredibly smooth and pleasant to eat. Their juicy texture makes them perfect for fresh consumption or for preparing mango-based desserts and drinks like aamras.
